Ingredients
- 1 lb large shrimp, peeled and deveined, tails on
- 4 tbsp unsalted butter, divided
- 1 tbsp olive oil
- 5 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/4 cup dry white wine or chicken broth
- 1 lemon, zested and juiced
- 2 tbsp chopped fresh parsley
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Pat the shrimp dry and season with salt and pepper.
- Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat until the butter foams.
- Add shrimp in a single layer and sear 1-2 minutes per side, until pink and just curled into a "C" shape; remove to a plate.
- Lower heat to medium, add garlic and red pepper flakes, and cook 30 seconds until fragrant but not browned.
- Pour in the wine to deglaze, scraping up any browned bits, and simmer 1-2 minutes to reduce slightly.
- Whisk in the remaining 2 tbsp butter and lemon juice off heat until the sauce turns glossy.
- Return the shrimp to the pan, toss to coat, and finish with lemon zest and parsley.
