Baked Cod with Herbs
This baked cod is a simple weeknight dish: mild white fillets are brushed with garlic-herb butter and roasted just until they flake, staying moist under a light golden top. It's a clean, low-fuss way to showcase fresh cod.

Ingredients
- 4 cod fillets (6 oz each)
- 3 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- 1 tsp chopped fresh thyme
- 1/2 tsp chopped fresh rosemary
- 1 lemon, half zested and juiced, half sliced
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 cup panko breadcrumbs (optional, for topping)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking dish with parchment or lightly grease it.
- Stir together melted butter, garlic, parsley, thyme, rosemary, lemon zest, and lemon juice.
- Pat cod fillets dry and season both sides with salt and pepper; arrange in the baking dish.
- Spoon the herb butter evenly over each fillet, then sprinkle with panko if using for a light crust.
- Top with lemon slices and bake 12-15 minutes, until the fish flakes easily and reaches an internal temperature of 130°F (it will carry over to 145°F while resting).
- Rest 2-3 minutes before serving, spooning the pan juices over the top.
