  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment or lightly grease it.
  2. Stir together melted butter, garlic, parsley, thyme, rosemary, lemon zest, and lemon juice.
  3. Pat cod fillets dry and season both sides with salt and pepper; arrange in the baking dish.
  4. Spoon the herb butter evenly over each fillet, then sprinkle with panko if using for a light crust.
  5. Top with lemon slices and bake 12-15 minutes, until the fish flakes easily and reaches an internal temperature of 130°F (it will carry over to 145°F while resting).
  6. Rest 2-3 minutes before serving, spooning the pan juices over the top.
