Turkey Taco Skillet

Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 (10 oz) can diced tomatoes with green chiles
- 1/2 cup chicken broth
- 1 cup shredded cheddar or Mexican blend cheese
- 1/4 cup fresh cilantro, chopped
- to taste Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add onion and cook 2-3 minutes until softened.
- Add ground turkey and garlic, breaking up the meat as it browns, about 5-6 minutes.
- Stir in taco seasoning, black beans, corn, diced tomatoes with chiles, and chicken broth.
- Bring to a simmer and cook 8-10 minutes, uncovered, stirring occasionally, until the liquid reduces and thickens slightly.
- Sprinkle shredded cheese evenly over the top, cover, and cook 2 minutes until melted.
- Remove from heat and scatter fresh cilantro over the top.
- Serve with lime wedges, and pile onto tortillas, rice, or tortilla chips.
