  1. In a bowl, combine drained tuna, mayonnaise, celery, red onion, pickle relish, Dijon mustard, and lemon juice. Season with salt and pepper and mix well.
  2. Preheat the broiler and set a rack about 6 inches from the heat.
  3. Lightly butter one side of each bread slice and arrange butter-side down on a baking sheet.
  4. Toast the bread under the broiler for 1-2 minutes until lightly golden.
  5. Flip the slices, then top each with a layer of the tuna salad and a tomato slice if using.
  6. Top each with a slice of cheddar cheese.
  7. Broil for 2-3 minutes, watching closely, until the cheese is melted and bubbling with light golden spots.
  8. Serve immediately while the cheese is hot and melty.
