- 12 oz noodles (ramen, udon, or spaghetti)
- 1/3 cup creamy peanut butter
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tbsp chili crisp or sriracha
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2-4 tbsp warm water, to thin
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 3 green onions, sliced
- 2 tbsp chopped roasted peanuts
Instructions
- Cook noodles according to package directions until al dente, then drain and rinse briefly with cold water to stop cooking.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, chili crisp, garlic, and ginger until smooth.
- Add warm water a tablespoon at a time, whisking until the sauce reaches a pourable, silky consistency.
- Toss the noodles with the peanut sauce until fully coated.
- Divide among bowls and top with shredded carrots and sliced cucumber.
- Garnish with green onions and chopped peanuts before serving.
