Sheet Pan Sausage and Peppers

  1. Preheat oven to 425°F and line a large sheet pan with parchment paper or foil.
  2. Toss the sliced peppers and onion with 2 tablespoons olive oil, garlic, Italian seasoning, red pepper flakes, salt, and pepper directly on the pan.
  3. Spread the vegetables into an even layer and nestle the sausage links among them.
  4. Drizzle the sausages with the remaining olive oil.
  5. Roast 22-25 minutes, flipping the sausages and stirring the vegetables halfway through, until the sausages are browned and cooked through (internal temp 160°F) and the vegetables are tender and caramelized.
  6. Let rest 2-3 minutes, then slice the sausages if desired.
  7. Sprinkle with fresh parsley and serve on rolls or over rice.
