Sheet Pan Sausage and Peppers

Ingredients
- 5 Italian sausage links (sweet or hot)
- 3 bell peppers (mixed colors), sliced into strips
- 1 large red onion, sliced into wedges
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- to taste Crusty rolls or cooked rice, for serving
Instructions
- Preheat oven to 425°F and line a large sheet pan with parchment paper or foil.
- Toss the sliced peppers and onion with 2 tablespoons olive oil, garlic, Italian seasoning, red pepper flakes, salt, and pepper directly on the pan.
- Spread the vegetables into an even layer and nestle the sausage links among them.
- Drizzle the sausages with the remaining olive oil.
- Roast 22-25 minutes, flipping the sausages and stirring the vegetables halfway through, until the sausages are browned and cooked through (internal temp 160°F) and the vegetables are tender and caramelized.
- Let rest 2-3 minutes, then slice the sausages if desired.
- Sprinkle with fresh parsley and serve on rolls or over rice.
