Sesame Tofu Stir-Fry

  1. Toss pressed tofu cubes in cornstarch until lightly coated.
  2. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Fry tofu on all sides, 6-8 minutes total, until golden and crisp. Remove and set aside.
  3. Add remaining oil to the pan and stir-fry broccoli, bell pepper, and carrot for 4-5 minutes until crisp-tender.
  4. Add garlic and ginger, stirring 30 seconds until fragrant.
  5. Whisk together soy sauce, rice vinegar, sesame oil, honey, and water, then pour into the pan.
  6. Return the tofu to the pan and toss everything together until coated and heated through, about 1-2 minutes.
  7. Garnish with sesame seeds and green onions before serving over rice.
