One-Pan Lemon Chicken
Golden pan-seared chicken thighs simmer in a bright, garlicky lemon-butter sauce that comes together in the same skillet. It's a fast, bright dinner with minimal dishes and big flavor.

Ingredients
- 4 boneless, skinless chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 lemon, thinly sliced
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 2 tablespoons fresh parsley, chopped
Instructions
- Season chicken thighs on both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden brown and cooked through. Transfer to a plate.
- Reduce heat to medium and add garlic, stirring for 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
- Add lemon slices and thyme, and simmer 3-4 minutes until slightly reduced.
- Stir in butter until the sauce is glossy, then return chicken to the pan to warm through and coat in sauce.
- Sprinkle with fresh parsley and serve immediately with the pan sauce spooned over top.
