One-Pan Lemon Chicken

Golden pan-seared chicken thighs simmer in a bright, garlicky lemon-butter sauce that comes together in the same skillet. It's a fast, bright dinner with minimal dishes and big flavor.

  1. Season chicken thighs on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden brown and cooked through. Transfer to a plate.
  3. Reduce heat to medium and add garlic, stirring for 30 seconds until fragrant.
  4. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  5. Add lemon slices and thyme, and simmer 3-4 minutes until slightly reduced.
  6. Stir in butter until the sauce is glossy, then return chicken to the pan to warm through and coat in sauce.
  7. Sprinkle with fresh parsley and serve immediately with the pan sauce spooned over top.
