Ingredients
- 1 lb boneless chicken breast or thighs
- 3 tbsp olive oil, divided
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 2 cups cooked rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 3/4 cup plain Greek yogurt
- 1 tbsp fresh dill, chopped

Instructions
- Whisk together 2 tablespoons olive oil, lemon juice, garlic, oregano, salt, and pepper. Toss with chicken and let marinate 10 minutes.
- Heat remaining olive oil in a skillet over medium-high heat and cook chicken 5-6 minutes per side until golden and cooked through. Rest, then slice.
- While chicken cooks, combine cucumber, tomatoes, and red onion in a bowl.
- Stir together Greek yogurt, dill, a squeeze of lemon, and a pinch of salt to make the sauce.
- Divide rice among bowls and top with sliced chicken, the cucumber-tomato salad, and feta.
- Drizzle generously with the yogurt sauce and serve immediately.
