  1. Heat sesame oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up, until browned, about 5-6 minutes.
  2. Add onion, garlic, and ginger, and cook 2 minutes until softened and fragrant.
  3. Stir in the coleslaw mix and cook 4-5 minutes, tossing frequently, until the cabbage wilts but still has some crunch.
  4. Add soy sauce, rice vinegar, and sriracha, stirring to coat everything evenly.
  5. Season with salt and pepper to taste.
  6. Remove from heat and top with sliced green onions and sesame seeds before serving.
