Egg Roll in a Bowl
All the savory flavor of a crispy egg roll without the wrapper or the fryer — ground pork and coleslaw mix are stir-fried with garlic, ginger, and soy sauce for a fast, low-carb one-pan dinner. It's ready in about 25 minutes and reheats beautifully.

Ingredients
- 1 lb ground pork (or ground chicken/turkey)
- 1 tablespoon sesame oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 (14 oz) bag coleslaw mix (shredded cabbage and carrots)
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional)
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds

Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up, until browned, about 5-6 minutes.
- Add onion, garlic, and ginger, and cook 2 minutes until softened and fragrant.
- Stir in the coleslaw mix and cook 4-5 minutes, tossing frequently, until the cabbage wilts but still has some crunch.
- Add soy sauce, rice vinegar, and sriracha, stirring to coat everything evenly.
- Season with salt and pepper to taste.
- Remove from heat and top with sliced green onions and sesame seeds before serving.
