Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 large tomatoes, sliced
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves, torn
- 3 tablespoons balsamic glaze
- 2 cloves garlic, minced
- 1 tablespoon butter
Instructions
- Pat chicken breasts dry and season both sides with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden and cooked through (internal temp 165°F). Transfer to a plate.
- Lower heat to medium, add butter and minced garlic, and stir for 30 seconds until fragrant.
- Return chicken to the skillet and top each piece with tomato slices and mozzarella.
- Cover and cook 2-3 minutes until the cheese melts fully.
- Drizzle with balsamic glaze and scatter fresh basil over the top.
- Serve immediately over pasta, rice, or with crusty bread.
