  1. Pat chicken breasts dry and season both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden and cooked through (internal temp 165°F). Transfer to a plate.
  3. Lower heat to medium, add butter and minced garlic, and stir for 30 seconds until fragrant.
  4. Return chicken to the skillet and top each piece with tomato slices and mozzarella.
