Beef and Broccoli Stir-Fry

Better than takeout and twice as fast, this beef and broccoli comes together in one hot skillet with a glossy garlic-ginger soy sauce. Slicing the beef thin against the grain is the only real trick — the rest is a 15-minute sprint to dinner.

  1. Toss the sliced beef with 1 tablespoon cornstarch and 1 tablespoon soy sauce; let sit while you prep everything else.
  2. Steam or microwave the broccoli florets for 2-3 minutes until bright green and just tender-crisp. Set aside.
  3. Whisk together the remaining soy sauce, beef broth, oyster sauce, brown sugar, sesame oil, and 2 teaspoons cornstarch in a small bowl.
  4. Heat 2 tablespoons oil in a wok or large skillet over high heat. Add the beef in a single layer and sear 1-2 minutes per side until browned. Remove to a plate.
  5. Add the remaining oil to the pan, then the garlic and ginger, stirring for 30 seconds until fragrant.
  6. Return the beef and broccoli to the pan, pour in the sauce, and toss constantly for 1-2 minutes until the sauce thickens and coats everything glossy.
  7. Serve immediately over steamed rice.
