Beef and Broccoli Stir-Fry
Better than takeout and twice as fast, this beef and broccoli comes together in one hot skillet with a glossy garlic-ginger soy sauce. Slicing the beef thin against the grain is the only real trick — the rest is a 15-minute sprint to dinner.

Ingredients
- 1 lb flank or sirloin steak, thinly sliced against the grain
- 1 tbsp cornstarch
- 3 tbsp soy sauce, divided
- 4 cups broccoli florets
- 3 tbsp vegetable oil, divided
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1/3 cup beef broth
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp toasted sesame oil
- 2 tsp cornstarch (for sauce)

Instructions
- Toss the sliced beef with 1 tablespoon cornstarch and 1 tablespoon soy sauce; let sit while you prep everything else.
- Steam or microwave the broccoli florets for 2-3 minutes until bright green and just tender-crisp. Set aside.
- Whisk together the remaining soy sauce, beef broth, oyster sauce, brown sugar, sesame oil, and 2 teaspoons cornstarch in a small bowl.
- Heat 2 tablespoons oil in a wok or large skillet over high heat. Add the beef in a single layer and sear 1-2 minutes per side until browned. Remove to a plate.
- Add the remaining oil to the pan, then the garlic and ginger, stirring for 30 seconds until fragrant.
- Return the beef and broccoli to the pan, pour in the sauce, and toss constantly for 1-2 minutes until the sauce thickens and coats everything glossy.
- Serve immediately over steamed rice.
