15-Minute Garlic Noodles

  1. Bring a large pot of salted water to a boil and cook the noodles according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. While noodles cook, whisk together soy sauce, oyster sauce, fish sauce, brown sugar, and white pepper in a small bowl.
  3. Melt the butter in a large skillet over medium heat. Add the minced garlic and cook, stirring constantly, for 1-2 minutes until fragrant and just starting to turn golden — do not let it burn.
  4. Pour in the sauce mixture and let it bubble for 30 seconds.
  5. Add the drained noodles to the skillet along with 2 tablespoons of reserved pasta water. Toss with tongs until every strand is coated and glossy, about 1-2 minutes.
  6. Drizzle with sesame oil and toss again.
  7. Plate immediately, topping with sliced green onions and toasted sesame seeds.
