  1. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
  2. Mash the avocado with a fork or potato masher, leaving it slightly chunky rather than completely smooth.
  3. Add the lime juice immediately and stir it in to prevent browning.
  4. Fold in the diced onion, tomato, minced chile, cilantro, and garlic if using.
  5. Season with salt and mix gently to combine, being careful not to overmash the mixture.
  6. Taste and adjust lime juice, salt, or heat as needed.
  7. Transfer to a serving bowl, pressing plastic wrap directly onto the surface if not serving right away to limit air exposure.
  8. Serve immediately with tortilla chips or as a topping for tacos.
