  1. Whisk together the orange juice, lime juice, garlic, jalapeño, oil, soy sauce, cumin, pepper, and salt in a shallow dish or zip-top bag.
  2. Add the steak, coat thoroughly, and marinate in the refrigerator for at least 1 hour, or up to 8 hours.
  3. Remove the steak from the fridge 20 minutes before cooking to take the chill off, and pat dry.
  4. Heat a grill or heavy skillet over high heat until very hot. Sear the steak 3-4 minutes per side for medium doneness, developing a good char.
  5. Let the steak rest for 5-8 minutes, then chop it into small, even pieces against the grain.
  6. Warm the corn tortillas directly over a flame or in a dry skillet until lightly charred and pliable.
  7. Fill each tortilla with chopped carne asada, top with diced onion and cilantro.
  8. Serve immediately with lime wedges and your favorite salsa.
