Carne Asada Tacos
Carne Asada Tacos feature thin-cut skirt or flank steak marinated in citrus, garlic, and chiles, then grilled hot and fast over an open flame — a staple of Northern Mexican and Sonoran-style street food. Chopped fine and piled onto charred tortillas, it's smoky, juicy, and simple.

Ingredients
- 1.5 lbs skirt or flank steak
- 1/3 cup orange juice
- 2 tbsp lime juice
- 3 garlic cloves, minced
- 1 jalapeño, minced
- 3 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp ground cumin
- 1/2 tsp black pepper
- 1 tsp salt
- 12 small corn tortillas
- 1/2 white onion, finely diced
- 1/2 cup chopped cilantro
- 2 limes, cut into wedges
- to taste Salsa of choice, for serving
Instructions
- Whisk together the orange juice, lime juice, garlic, jalapeño, oil, soy sauce, cumin, pepper, and salt in a shallow dish or zip-top bag.
- Add the steak, coat thoroughly, and marinate in the refrigerator for at least 1 hour, or up to 8 hours.
- Remove the steak from the fridge 20 minutes before cooking to take the chill off, and pat dry.
- Heat a grill or heavy skillet over high heat until very hot. Sear the steak 3-4 minutes per side for medium doneness, developing a good char.
- Let the steak rest for 5-8 minutes, then chop it into small, even pieces against the grain.
- Warm the corn tortillas directly over a flame or in a dry skillet until lightly charred and pliable.
- Fill each tortilla with chopped carne asada, top with diced onion and cilantro.
- Serve immediately with lime wedges and your favorite salsa.
