Halloumi Skewers

  2. Whisk olive oil, lemon juice, oregano, paprika, and garlic together in a bowl.
  3. Toss halloumi cubes and vegetables gently in the marinade, coating evenly.
  4. Thread halloumi and vegetables alternately onto the skewers.
  5. Preheat a grill or grill pan to medium-high heat.
  6. Grill skewers 8-10 minutes, turning every 2-3 minutes, until halloumi is golden with grill marks and vegetables are tender-crisp.
  7. Remove from heat and drizzle with any remaining marinade before serving.
