Halloumi Skewers
These skewers pair firm, salty Cypriot halloumi cheese with sweet bell peppers, zucchini, and cherry tomatoes, grilled until the cheese develops a golden crust while staying soft inside. It's a vegetarian mezze favorite thanks to halloumi's unique ability to hold its shape over open flame.

Ingredients
- 16 oz halloumi cheese, cut into 1-inch cubes
- 2 bell peppers, cut into 1-inch pieces
- 1 zucchini, sliced into half-moons
- 1 red onion, cut into chunks
- 12 cherry tomatoes
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 2 cloves garlic, minced

Instructions
- If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Whisk olive oil, lemon juice, oregano, paprika, and garlic together in a bowl.
- Toss halloumi cubes and vegetables gently in the marinade, coating evenly.
- Thread halloumi and vegetables alternately onto the skewers.
- Preheat a grill or grill pan to medium-high heat.
- Grill skewers 8-10 minutes, turning every 2-3 minutes, until halloumi is golden with grill marks and vegetables are tender-crisp.
- Remove from heat and drizzle with any remaining marinade before serving.
