Greek Chicken Souvlaki
Souvlaki is Greece's iconic street food: small chunks of chicken marinated in lemon, garlic, and oregano, then skewered and grilled over high heat until charred and juicy. Served with warm pita, tzatziki, and fresh vegetables, it's a quick and satisfying grilled meal.

Ingredients
- 1.5 lbs boneless, skinless chicken breast or thigh, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 4 pita breads
- 1 cup tzatziki sauce
- 1 tomato, sliced
- 1/2 red onion, thinly sliced

Instructions
- If using wooden skewers, soak in water for 20 minutes.
- Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper together in a bowl.
- Add chicken cubes and toss to coat; cover and marinate in the refrigerator at least 2 hours.
- Thread the marinated chicken onto skewers.
- Preheat a grill or grill pan to medium-high heat.
- Grill skewers 10-12 minutes total, turning every 2-3 minutes, until charred outside and cooked through (165°F internal).
- Warm the pita breads on the grill for the last minute of cooking.
- Serve the skewers with warm pita, tzatziki, sliced tomato, and red onion.
