Greek Chicken Souvlaki

  1. If using wooden skewers, soak in water for 20 minutes.
  2. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper together in a bowl.
  3. Add chicken cubes and toss to coat; cover and marinate in the refrigerator at least 2 hours.
  4. Thread the marinated chicken onto skewers.
  5. Preheat a grill or grill pan to medium-high heat.
  6. Grill skewers 10-12 minutes total, turning every 2-3 minutes, until charred outside and cooked through (165°F internal).
  7. Warm the pita breads on the grill for the last minute of cooking.
  8. Serve the skewers with warm pita, tzatziki, sliced tomato, and red onion.
