Fattoush
Fattoush is a vibrant Lebanese bread salad built from crisp vegetables, fresh herbs, and toasted or fried pieces of leftover pita, all tossed in a tangy sumac-lemon dressing. It's a clever way of using stale flatbread and is a fixture of Levantine mezze spreads.

Ingredients
- 2 pita breads, torn into pieces
- 2 tbsp olive oil, plus 1/4 cup for dressing
- 3 Roma tomatoes, chopped
- 1 cucumber, chopped
- 4 radishes, thinly sliced
- 3 green onions, sliced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 romaine heart, chopped
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp pomegranate molasses
- 1 tbsp sumac, plus extra for garnish
Instructions
- Preheat oven to 375°F, toss torn pita with 2 tbsp olive oil, and bake 8-10 minutes until golden and crisp.
- In a large bowl, combine tomatoes, cucumber, radishes, green onions, parsley, mint, and romaine.
- Whisk together the remaining olive oil, lemon juice, garlic, pomegranate molasses, and sumac to make the dressing.
- Pour the dressing over the vegetables and toss well.
- Add the crisp pita pieces just before serving and toss lightly so they stay crunchy.
- Sprinkle with extra sumac and serve immediately.
