Fattoush

Fattoush is a vibrant Lebanese bread salad built from crisp vegetables, fresh herbs, and toasted or fried pieces of leftover pita, all tossed in a tangy sumac-lemon dressing. It's a clever way of using stale flatbread and is a fixture of Levantine mezze spreads.

  1. Preheat oven to 375°F, toss torn pita with 2 tbsp olive oil, and bake 8-10 minutes until golden and crisp.
  2. In a large bowl, combine tomatoes, cucumber, radishes, green onions, parsley, mint, and romaine.
  3. Whisk together the remaining olive oil, lemon juice, garlic, pomegranate molasses, and sumac to make the dressing.
  4. Pour the dressing over the vegetables and toss well.
  5. Add the crisp pita pieces just before serving and toss lightly so they stay crunchy.
  6. Sprinkle with extra sumac and serve immediately.
