  1. Cook the pasta in salted boiling water until al dente, according to package directions, then drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef, breaking it up with a spoon, for 6-7 minutes until fully cooked; drain excess fat.
  3. Stir in the chili powder, cumin, paprika, garlic powder, and salt, cooking for 30 seconds until fragrant.
  4. Add the diced tomatoes and beef broth to the skillet and bring to a simmer.
  5. Stir in the cooked pasta and simmer for 3-4 minutes, until the sauce thickens slightly and coats the noodles.
  6. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Serve warm, topped with a dollop of sour cream if desired.
