Taco Pasta
This one-pot dinner combines two kid favorites — tacos and pasta — into a cheesy, mildly spiced skillet meal that comes together in under 30 minutes. It's a quick, no-fuss dinner the whole family can agree on.

Ingredients
- 12 ounces rotini or shell pasta
- 1 pound ground beef
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 cup beef broth or water
- 1 1/2 cups shredded cheddar cheese
- to taste Sour cream, for serving (optional)
Instructions
- Cook the pasta in salted boiling water until al dente, according to package directions, then drain and set aside.
- In a large skillet over medium heat, brown the ground beef, breaking it up with a spoon, for 6-7 minutes until fully cooked; drain excess fat.
- Stir in the chili powder, cumin, paprika, garlic powder, and salt, cooking for 30 seconds until fragrant.
- Add the diced tomatoes and beef broth to the skillet and bring to a simmer.
- Stir in the cooked pasta and simmer for 3-4 minutes, until the sauce thickens slightly and coats the noodles.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Serve warm, topped with a dollop of sour cream if desired.
