Ingredients
- 3 medium sweet potatoes, peeled and cut into 1/4-inch fries
- 2 tablespoons olive oil
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika

Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Soak the cut sweet potato fries in a bowl of cold water for 15 minutes, then drain and pat completely dry.
- Toss the dry fries with cornstarch until lightly and evenly coated.
- Add olive oil, salt, garlic powder, and paprika, tossing again until every fry is coated.
- Spread the fries in a single layer on the baking sheet, making sure they don't touch or overlap.
- Bake for 25-30 minutes, flipping halfway through, until the edges are crisp and golden.
- Let cool for 2-3 minutes before serving with ketchup.
