Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 1 tablespoon melted butter, plus more for the griddle
- 1 banana, sliced into rounds
- 1 cup strawberries, hulled and sliced
- to taste Maple syrup, for drizzling
- 8 wooden skewers
Instructions
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk milk, egg, and melted butter together, then stir into the dry ingredients until just combined.
- Heat a griddle or nonstick skillet over medium-low heat and lightly butter the surface.
- Drop tablespoon-size portions of batter onto the griddle to make silver-dollar pancakes, cooking for 1-2 minutes per side until golden.
- Repeat with the remaining batter, making about 24 mini pancakes total, and let them cool slightly.
- Thread the mini pancakes onto skewers, alternating with banana and strawberry slices.
- Arrange the skewers on a platter and drizzle with maple syrup just before serving.
