  1. Add oats to a blender and pulse until they form a coarse flour, about 20-30 seconds.
  2. Add mashed banana, eggs, milk, baking powder, cinnamon, vanilla, and salt to the blender; blend until smooth, about 30 seconds.
  3. Let the batter rest for 5 minutes so the oats can absorb some liquid and thicken slightly.
  4. Heat a nonstick griddle or skillet over medium-low heat and melt a little butter to coat.
  5. Pour 1/4-cup portions of batter onto the griddle and cook for 2-3 minutes, until bubbles form on top and the edges look set.
  6. Flip and cook for another 1-2 minutes, until golden brown on both sides.
  7. Repeat with the remaining batter, adding more butter to the griddle as needed, and serve warm with maple syrup.
