Banana Oat Pancakes

Ingredients
- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 2 large eggs
- 3/4 cup milk
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- to taste Pinch of salt
- 1 tablespoon butter, for the griddle
- to taste Maple syrup, for serving
Instructions
- Add oats to a blender and pulse until they form a coarse flour, about 20-30 seconds.
- Add mashed banana, eggs, milk, baking powder, cinnamon, vanilla, and salt to the blender; blend until smooth, about 30 seconds.
- Let the batter rest for 5 minutes so the oats can absorb some liquid and thicken slightly.
- Heat a nonstick griddle or skillet over medium-low heat and melt a little butter to coat.
- Pour 1/4-cup portions of batter onto the griddle and cook for 2-3 minutes, until bubbles form on top and the edges look set.
- Flip and cook for another 1-2 minutes, until golden brown on both sides.
- Repeat with the remaining batter, adding more butter to the griddle as needed, and serve warm with maple syrup.
