  2. In a large bowl, whisk together oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Toss the diced apple with lemon juice to prevent browning, then stir into the dry ingredients along with the melted butter, egg, and vanilla until a thick, sticky dough forms.
  4. Press the mixture firmly and evenly into the prepared pan using the back of a spoon or damp fingers.
  5. Bake for 25-30 minutes, until the edges are golden brown and the center is set.
