Salmon Teriyaki
Salmon teriyaki is pan-seared salmon fillets glazed in a glossy, sweet-savory homemade teriyaki sauce made from soy sauce, mirin, sake, and sugar. Quick enough for a weeknight, it delivers deeply caramelized flavor with tender, flaky fish.

Ingredients
- 4 salmon fillets (about 6 oz each), skin-on
- to taste Salt and black pepper, to taste
- 1 tbsp neutral oil
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sake
- 2 tbsp sugar
- 1 tsp grated fresh ginger
- 1 tsp toasted sesame seeds
- 2 green onions, thinly sliced
- 4 cups steamed rice, for serving
Instructions
- Pat the salmon fillets dry and season lightly with salt and pepper.
- In a small bowl, whisk together the soy sauce, mirin, sake, sugar, and grated ginger to make the teriyaki sauce.
- Heat the oil in a nonstick skillet over medium-high heat and place the salmon skin-side down.
- Sear for 4 minutes until the skin is crisp, then flip and cook the other side for 2-3 minutes.
- Pour the teriyaki sauce into the pan around the fillets and reduce the heat to medium.
- Spoon the sauce over the salmon continuously as it simmers and thickens, about 3-4 minutes, until glossy and coating the fish.
- Remove from heat once the salmon flakes easily and the sauce has reduced to a syrupy glaze.
- Plate over steamed rice, spoon extra glaze on top, and garnish with sesame seeds and green onion.
