Salmon Teriyaki

Salmon teriyaki is pan-seared salmon fillets glazed in a glossy, sweet-savory homemade teriyaki sauce made from soy sauce, mirin, sake, and sugar. Quick enough for a weeknight, it delivers deeply caramelized flavor with tender, flaky fish.

  1. Pat the salmon fillets dry and season lightly with salt and pepper.
  2. In a small bowl, whisk together the soy sauce, mirin, sake, sugar, and grated ginger to make the teriyaki sauce.
  3. Heat the oil in a nonstick skillet over medium-high heat and place the salmon skin-side down.
  4. Sear for 4 minutes until the skin is crisp, then flip and cook the other side for 2-3 minutes.
  5. Pour the teriyaki sauce into the pan around the fillets and reduce the heat to medium.
  6. Spoon the sauce over the salmon continuously as it simmers and thickens, about 3-4 minutes, until glossy and coating the fish.
  7. Remove from heat once the salmon flakes easily and the sauce has reduced to a syrupy glaze.
  8. Plate over steamed rice, spoon extra glaze on top, and garnish with sesame seeds and green onion.
