Dorayaki
Dorayaki is a beloved Japanese confection of two fluffy honey-sweetened pancakes sandwiching a generous layer of sweet red bean paste (anko). Soft, slightly springy, and just sweet enough, it's the iconic treat famously favored by the cartoon cat Doraemon.

Ingredients
- 2 eggs
- 1/2 cup sugar
- 2 tbsp honey
- 1 cup all-purpose flour
- 1 tsp baking powder
- 3 tbsp water
- 1 tbsp neutral oil, for the pan
- 1 1/2 cups sweet red bean paste (anko), store-bought or homemade
Instructions
- In a mixing bowl, whisk the eggs, sugar, and honey together until pale and slightly thickened, about 2 minutes.
- Sift in the flour and baking powder, folding gently until just combined.
- Whisk in the water to loosen the batter to a thick, pourable consistency; let it rest for 15 minutes.
- Heat a nonstick skillet over low-medium heat and wipe with a very thin film of oil.
- Pour 1/4 cup of batter per pancake, cooking until bubbles form on the surface and the edges look set, about 2 minutes.
- Flip and cook the other side for 1 minute until golden; repeat to make 8 pancakes total, stacking them under a clean towel to stay soft.
- Spread about 3 tablespoons of red bean paste onto the flat side of one pancake.
- Sandwich with a second pancake, flat sides together, pressing gently to seal. Repeat with remaining pancakes and filling.
