Honey Glazed Ham

  1. Remove the ham from the fridge 30-45 minutes before cooking to take the chill off. Preheat oven to 300°F (150°C).
  2. Place the ham cut-side down in a roasting pan. If desired, score the surface in a diamond pattern and stud with whole cloves.
  3. Cover tightly with foil and bake for 1 hour, about 12-15 minutes per pound, until warmed through to 120°F (49°C) internally.
  4. Meanwhile, combine honey, brown sugar, butter, Dijon mustard, vinegar, cloves, cinnamon, and pineapple juice in a saucepan. Simmer over medium heat for 8-10 minutes until slightly thickened.
  5. Remove foil from the ham and brush generously with the glaze. Increase oven temperature to 425°F (220°C).
  6. Return the ham to the oven, uncovered, basting with more glaze every 10 minutes, for 20-30 minutes total, until deeply caramelized and the internal temperature reaches 140°F (60°C).
  7. Let the ham rest for 15-20 minutes before slicing along the spiral cuts. Serve with any remaining glaze on the side.
