Turkey Lettuce Wraps

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground turkey and cook, breaking it up with a spatula, for 5-6 minutes until browned and cooked through.
  3. Stir in the garlic and ginger, cooking for 30 seconds until fragrant.
  4. Add the diced water chestnuts and cook for 2 minutes to warm through and retain their crunch.
  5. Pour in the hoisin sauce, soy sauce, rice vinegar, and sriracha (if using), stirring to coat the turkey evenly, and simmer for 2-3 minutes until slightly thickened.
  6. Stir in half the sliced scallions.
  7. Arrange the butter lettuce leaves on a platter and spoon the warm turkey mixture into each leaf.
  8. Top with shredded carrot, remaining scallions, and chopped peanuts before serving.
