Turkey Lettuce Wraps

Ingredients
- 1 tablespoon sesame oil
- 1 lb lean ground turkey
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 (8 oz) can water chestnuts, drained and finely diced
- 3 tablespoons hoisin sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional)
- 3 scallions, thinly sliced, divided
- 1 head butter lettuce, leaves separated and washed
- 1/4 cup shredded carrot
- 2 tablespoons chopped roasted peanuts
Instructions
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the ground turkey and cook, breaking it up with a spatula, for 5-6 minutes until browned and cooked through.
- Stir in the garlic and ginger, cooking for 30 seconds until fragrant.
- Add the diced water chestnuts and cook for 2 minutes to warm through and retain their crunch.
- Pour in the hoisin sauce, soy sauce, rice vinegar, and sriracha (if using), stirring to coat the turkey evenly, and simmer for 2-3 minutes until slightly thickened.
- Stir in half the sliced scallions.
- Arrange the butter lettuce leaves on a platter and spoon the warm turkey mixture into each leaf.
- Top with shredded carrot, remaining scallions, and chopped peanuts before serving.
