Protein Pancakes
Fluffy pancakes made with a blender batter of oats, banana, eggs, and vanilla protein powder — no flour required. A high-protein breakfast that griddles up golden and holds together perfectly for stacking.

Ingredients
- 1 cup rolled oats
- 1 scoop (about 30g) vanilla protein powder
- 1 ripe banana
- 2 large eggs
- 1/2 cup milk of choice
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- to taste Pinch of salt
- 1 tablespoon butter or neutral oil, for the pan
- to taste Maple syrup and fresh banana slices, for serving
Instructions
- Add the rolled oats, protein powder, banana, eggs, milk, baking powder, vanilla, cinnamon, and salt to a blender.
- Blend on high for 30-45 seconds until completely smooth, scraping down the sides once if needed.
- Let the batter rest for 5 minutes so the oats hydrate slightly and thicken.
- Heat a nonstick skillet or griddle over medium-low heat and add a small pat of butter.
- Pour 1/4-cup portions of batter onto the griddle and cook for 2-3 minutes until bubbles form on the surface and the edges look set.
- Flip carefully and cook another 1-2 minutes until golden brown and cooked through.
- Repeat with the remaining batter, adding more butter to the pan as needed.
- Stack the pancakes, top with fresh banana slices, and drizzle with maple syrup.
