Protein Pancakes

  1. Add the rolled oats, protein powder, banana, eggs, milk, baking powder, vanilla, cinnamon, and salt to a blender.
  2. Blend on high for 30-45 seconds until completely smooth, scraping down the sides once if needed.
  3. Let the batter rest for 5 minutes so the oats hydrate slightly and thicken.
  4. Heat a nonstick skillet or griddle over medium-low heat and add a small pat of butter.
  5. Pour 1/4-cup portions of batter onto the griddle and cook for 2-3 minutes until bubbles form on the surface and the edges look set.
  6. Flip carefully and cook another 1-2 minutes until golden brown and cooked through.
  7. Repeat with the remaining batter, adding more butter to the pan as needed.
  8. Stack the pancakes, top with fresh banana slices, and drizzle with maple syrup.
