Grilled Salmon with Greens

  1. Pat the salmon fillets dry and rub with 1 tablespoon olive oil, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  2. Preheat a grill or grill pan to medium-high heat and oil the grates.
  3. Grill the salmon skin-side down for 5-6 minutes, then flip and cook another 3-4 minutes until it flakes easily and reaches 125-130°F (52-54°C) internally.
  4. While the salmon grills, heat the remaining tablespoon of olive oil in a large skillet over medium heat and add the sliced garlic and red pepper flakes; cook 30 seconds until fragrant.
  5. Add the mixed greens in batches, tossing until wilted, about 4-5 minutes, then season with the remaining salt and pepper.
  6. Squeeze the lemon juice over the wilted greens and toss to combine.
  7. Divide the sautéed greens among plates, top with a grilled salmon fillet, and scatter toasted pine nuts over the top.
  8. Garnish with lemon slices and serve immediately.
