Grilled Salmon with Greens

Ingredients
- 4 (6 oz) salmon fillets, skin-on
- 2 tablespoons olive oil, divided
- 1 teaspoon garlic powder
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1 lemon, half juiced and half sliced
- 3 cloves garlic, thinly sliced
- 8 cups mixed greens (chard, kale, or spinach), stemmed and chopped
- 1/4 teaspoon red pepper flakes
- 2 tablespoons pine nuts, toasted
Instructions
- Pat the salmon fillets dry and rub with 1 tablespoon olive oil, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
- Preheat a grill or grill pan to medium-high heat and oil the grates.
- Grill the salmon skin-side down for 5-6 minutes, then flip and cook another 3-4 minutes until it flakes easily and reaches 125-130°F (52-54°C) internally.
- While the salmon grills, heat the remaining tablespoon of olive oil in a large skillet over medium heat and add the sliced garlic and red pepper flakes; cook 30 seconds until fragrant.
- Add the mixed greens in batches, tossing until wilted, about 4-5 minutes, then season with the remaining salt and pepper.
- Squeeze the lemon juice over the wilted greens and toss to combine.
- Divide the sautéed greens among plates, top with a grilled salmon fillet, and scatter toasted pine nuts over the top.
- Garnish with lemon slices and serve immediately.
