Greek Yogurt Parfait

Ingredients
- 2 cups plain Greek yogurt (2% or whole milk)
- 1 tablespoon honey, plus more for drizzling
- 1/2 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 3/4 cup granola
- 2 tablespoons sliced almonds
- 1 tablespoon chia seeds
- to taste Fresh mint leaves, for garnish
Instructions
- In a bowl, stir the Greek yogurt with honey and vanilla extract until smooth.
- Rinse and slice the strawberries; leave blueberries and raspberries whole.
- In two glasses, spoon a layer of sweetened yogurt into the bottom of each.
- Add a layer of mixed berries, followed by a layer of granola.
- Repeat the layers once more, ending with a final layer of berries and granola on top.
- Sprinkle with sliced almonds and chia seeds.
- Drizzle with extra honey, garnish with mint, and serve immediately for the best granola crunch.
