  1. Add the watermelon cubes, mint leaves, lime juice, honey (if using), and cold water to a blender.
  2. Blend on high until completely smooth, about 30 seconds.
  3. Taste and adjust sweetness or lime as desired; watermelon sweetness varies, so add more honey if needed.
  4. For a perfectly smooth cooler, strain through a fine-mesh sieve into a pitcher to remove pulp (optional, can be skipped for a more rustic texture).
  5. Chill for at least 20 minutes if time allows, or serve immediately over ice.
  6. Garnish each glass with a lime wheel and a fresh mint sprig.
