Watermelon Mint Cooler

Ingredients
- 4 cups seedless watermelon, cubed
- 10-12 fresh mint leaves, plus extra for garnish
- 2 tablespoons fresh lime juice
- 1 tablespoon honey or agave syrup (optional, to taste)
- 1/2 cup cold water
- to taste Ice, for serving
- to taste Lime wheels, for garnish
Instructions
- Add the watermelon cubes, mint leaves, lime juice, honey (if using), and cold water to a blender.
- Blend on high until completely smooth, about 30 seconds.
- Taste and adjust sweetness or lime as desired; watermelon sweetness varies, so add more honey if needed.
- For a perfectly smooth cooler, strain through a fine-mesh sieve into a pitcher to remove pulp (optional, can be skipped for a more rustic texture).
- Chill for at least 20 minutes if time allows, or serve immediately over ice.
- Garnish each glass with a lime wheel and a fresh mint sprig.
