  1. Combine the coarsely ground coffee and cold water in a large jar or pitcher; stir gently to make sure all the grounds are saturated.
  2. Cover and steep at room temperature or in the fridge for 12-18 hours (18 hours yields a stronger, smoother concentrate).
  3. Strain the mixture through a fine-mesh sieve lined with a coffee filter or cheesecloth into a clean pitcher, pressing gently to extract all the liquid.
  4. Discard the spent grounds; you now have cold brew concentrate.
  5. To serve, fill a glass with ice and pour in the concentrate diluted with equal parts water or milk, adjusting strength to taste.
  6. Sweeten if desired and stir well before drinking.
