Coconut Smoothie Bowl

Ingredients
- 2 frozen bananas, sliced
- 1 cup frozen pineapple chunks
- 1/2 cup full-fat coconut milk
- 1/4 cup plain yogurt or coconut yogurt
- 1 tablespoon honey (optional)
- 2 tablespoons toasted coconut flakes, for topping
- 1/4 cup granola, for topping
- to taste Fresh sliced kiwi, mango, or berries, for topping
- 1 tablespoon chia seeds, for topping
Instructions
- Add the frozen banana, frozen pineapple, coconut milk, yogurt, and honey to a high-speed blender.
- Blend on low first to break up the fruit, then increase to high speed, using the tamper or pausing to scrape down the sides as needed.
- Blend until thick and smooth like soft-serve ice cream; the mixture should be thick enough to eat with a spoon, not drink.
- If too thick to blend, add a splash of coconut milk, one tablespoon at a time.
- Pour into two chilled bowls immediately (it melts fast).
- Top with toasted coconut flakes, granola, sliced fresh fruit, and chia seeds in neat rows or a fanned pattern.
- Serve immediately with a spoon.
