Granola Bowl
Homemade oat-and-nut granola is baked low and slow until deeply golden and clustered, then layered over creamy yogurt with fresh fruit and a drizzle of honey for a crunchy, wholesome breakfast bowl.

Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup mixed raw nuts (almonds, walnuts, pecans), roughly chopped
- 1/3 cup pumpkin seeds
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup honey or maple syrup
- 1/3 cup neutral oil (such as coconut or vegetable oil)
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries or raisins
- 2 cups plain or vanilla Greek yogurt
- 1 cup sliced fresh strawberries or banana
- to taste Extra honey, for drizzling
Instructions
- Preheat the oven to 300°F and line a large baking sheet with parchment paper.
- In a large bowl, combine the oats, nuts, pumpkin seeds, cinnamon, and salt.
- Warm the honey and oil together in a small saucepan, or in the microwave, until loosened and easy to pour.
- Stir the honey mixture and vanilla into the dry ingredients until every oat and nut is evenly coated.
- Spread the mixture in an even layer on the prepared baking sheet, pressing it down slightly to encourage clusters.
- Bake for 25-30 minutes, stirring gently every 10 minutes, until golden brown and fragrant.
- Let the granola cool completely on the pan undisturbed, which allows it to crisp up and form clumps.
- Once cooled, stir in the dried cranberries.
- To serve, spoon Greek yogurt into bowls, top generously with granola and fresh fruit, and finish with a drizzle of honey.
