Grilled Shrimp Skewers

Ingredients
- 2 lbs large shrimp (16/20 count), peeled and deveined, tails on
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 tbsp smoked paprika
- 1/2 tsp red pepper flakes
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
- to taste Lemon wedges, for serving
Instructions
- Pat the shrimp completely dry with paper towels — excess moisture will steam the shrimp rather than let them char.
- In a bowl, whisk together olive oil, garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and pepper.
- Add the shrimp and toss to coat. Marinate at room temperature for no more than 20 minutes; shrimp can turn mushy if marinated too long in acid.
- If using wooden skewers, soak in water for 20 minutes beforehand.
- Thread the shrimp onto skewers through both the head and tail ends so they lie flat and don't spin when turning.
- Preheat the grill to high heat, about 450°F, and oil the grates well.
- Grill the skewers for 2-3 minutes per side until the shrimp turn opaque, curl into a "C" shape, and pick up light char marks.
- Remove immediately (shrimp overcook fast), garnish with fresh parsley, and serve hot with lemon wedges.
