Grilled Shrimp Skewers

  1. Pat the shrimp completely dry with paper towels — excess moisture will steam the shrimp rather than let them char.
  2. In a bowl, whisk together olive oil, garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and pepper.
  3. Add the shrimp and toss to coat. Marinate at room temperature for no more than 20 minutes; shrimp can turn mushy if marinated too long in acid.
  4. If using wooden skewers, soak in water for 20 minutes beforehand.
  5. Thread the shrimp onto skewers through both the head and tail ends so they lie flat and don't spin when turning.
  6. Preheat the grill to high heat, about 450°F, and oil the grates well.
  7. Grill the skewers for 2-3 minutes per side until the shrimp turn opaque, curl into a "C" shape, and pick up light char marks.
  8. Remove immediately (shrimp overcook fast), garnish with fresh parsley, and serve hot with lemon wedges.
