Grilled Pineapple

Ingredients
- 1 ripe pineapple, peeled, cored, and cut into 3/4-inch rings
- 3 tbsp unsalted butter, melted
- 3 tbsp brown sugar
- 1/2 tsp ground cinnamon
- 1 lime, zested and juiced
- to taste Pinch of kosher salt
- to taste Vanilla ice cream, for serving (optional)
- to taste Fresh mint leaves, for garnish
Instructions
- Choose a pineapple that smells sweet at the base and gives slightly when pressed — this ensures good ripeness for caramelizing.
- Whisk together melted butter, brown sugar, cinnamon, lime zest, lime juice, and a pinch of salt in a small bowl until the sugar dissolves.
- Preheat the grill to medium-high heat, about 400°F, and oil the grates well.
- Brush the pineapple rings generously on both sides with the butter-sugar glaze.
- Grill the rings for 3-4 minutes per side, brushing with more glaze once flipped, until deep golden-brown grill marks form and the edges caramelize.
- Watch closely near the end — the sugar can go from caramelized to burnt quickly.
- Remove from the grill and drizzle with any remaining glaze.
- Serve warm, plain or topped with a scoop of vanilla ice cream and a few fresh mint leaves.
