Grilled Lamb Chops

  1. Pat lamb chops dry with paper towels and place in a shallow dish or resealable bag.
  2. Whisk together olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
  3. Pour the marinade over the chops, turning to coat evenly. Marinate at room temperature for 1 hour, or refrigerate up to 8 hours.
  4. Remove chops from the fridge 20 minutes before grilling to take the chill off.
  5. Preheat the grill to high heat, 450-500°F, and clean the grates well.
  6. Grill the chops for 3-4 minutes per side for medium-rare, until a deep sear forms and internal temperature reaches 130-135°F.
  7. Transfer to a plate, tent loosely with foil, and rest for 5 minutes to let juices redistribute.
  8. Sprinkle with a pinch of flaky salt and serve immediately, chops still slightly pink in the center.
