Grilled Lamb Chops

Ingredients
- 8 lamb rib chops (about 2 lbs), frenched
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 1 lemon, zested and juiced
- 1 tsp kosher salt, plus more to finish
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Pat lamb chops dry with paper towels and place in a shallow dish or resealable bag.
- Whisk together olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
- Pour the marinade over the chops, turning to coat evenly. Marinate at room temperature for 1 hour, or refrigerate up to 8 hours.
- Remove chops from the fridge 20 minutes before grilling to take the chill off.
- Preheat the grill to high heat, 450-500°F, and clean the grates well.
- Grill the chops for 3-4 minutes per side for medium-rare, until a deep sear forms and internal temperature reaches 130-135°F.
- Transfer to a plate, tent loosely with foil, and rest for 5 minutes to let juices redistribute.
- Sprinkle with a pinch of flaky salt and serve immediately, chops still slightly pink in the center.
