Chicken Kebabs
Cubes of chicken thigh marinate in a bright, garlicky yogurt marinade before threading onto skewers with bell peppers, red onion, and zucchini. Fast on the grill and packed with char, these kebabs are juicy, tangy, and endlessly versatile.

Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into 1.5-inch cubes
- 1 cup plain yogurt
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 red bell pepper, cut into 1.5-inch squares
- 1 yellow bell pepper, cut into 1.5-inch squares
- 1 red onion, cut into 1.5-inch chunks
- 1 zucchini, sliced into 1/2-inch rounds
Instructions
- In a large bowl, whisk together yogurt, olive oil, garlic, lemon juice, smoked paprika, cumin, salt, and pepper.
- Add the chicken cubes and toss to coat thoroughly. Cover and marinate in the refrigerator for at least 2 hours, up to overnight.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken onto skewers, alternating with bell pepper, red onion, and zucchini pieces.
- Preheat the grill to medium-high heat, about 400°F.
- Grill the skewers for 12-15 minutes total, turning every 3 minutes, until the chicken is charred in spots and reaches 165°F internally.
- Let rest for 3 minutes off the heat before serving.
- Serve with warm flatbread, extra lemon wedges, and a side of yogurt sauce or hummus.
