Tiramisu
A classic Italian no-bake dessert of espresso-soaked ladyfingers layered with a light, creamy mascarpone mixture and dusted with cocoa powder. Rich, coffee-forward, and elegantly simple.

Ingredients
- 6 large egg yolks
- 3/4 cup granulated sugar
- 1/4 cup Marsala wine or coffee liqueur, optional
- 16 oz mascarpone cheese, room temperature
- 1 1/2 cups heavy cream, cold
- 2 cups strong brewed espresso, cooled
- 2 tbsp coffee liqueur (for soaking liquid), optional
- 2 packages (about 24) ladyfinger cookies (savoiardi)
- 3 tbsp unsweetened cocoa powder, for dusting
- to taste Dark chocolate shavings, optional
Instructions
- Whisk egg yolks and sugar together in a heatproof bowl set over simmering water (double boiler), whisking constantly until pale, thick, and doubled in volume, about 8 minutes. Remove from heat and cool slightly.
- Whisk in the Marsala wine, then fold in the mascarpone until smooth and lump-free.
- In a separate bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the mascarpone mixture in two additions until light and airy.
- Combine the cooled espresso with coffee liqueur (if using) in a shallow dish.
- Quickly dip each ladyfinger into the espresso mixture, just 1-2 seconds per side so they don't get soggy, and arrange in a single layer in a 9x9-inch dish.
- Spread half the mascarpone cream over the ladyfingers, repeat with a second layer of dipped ladyfingers, then top with the remaining cream.
- Dust generously with cocoa powder, cover, and refrigerate at least 4 hours or overnight before serving. Add chocolate shavings just before serving if desired.
