  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, mash the bananas well, then stir in melted butter.
  3. Mix in sugar, beaten egg, vanilla, and sour cream until combined.
  4. Sprinkle baking soda, salt, and cinnamon over the mixture and stir in.
  5. Fold in the flour just until no dry streaks remain; do not overmix. Fold in walnuts if using.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake 55-65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in the pan 10 minutes, then turn out onto a wire rack to cool completely before slicing.
