Meatloaf with Gravy

Ingredients
- 2 lbs ground beef (85/15)
- 1 cup breadcrumbs
- 2/3 cup whole milk
- 2 large eggs
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons unsalted butter (for gravy)
- 2 tablespoons all-purpose flour (for gravy)
- 2 cups beef broth (for gravy)
Instructions
- Preheat oven to 350°F and line a baking sheet or loaf pan with parchment paper.
- In a large bowl, soak the breadcrumbs in the milk for 5 minutes to soften.
- Add the ground beef, eggs, diced onion, garlic, Worcestershire sauce, salt, and pepper to the breadcrumb mixture and mix gently by hand just until combined; avoid overmixing.
- Shape the mixture into a loaf on the prepared sheet or press into the loaf pan.
- Whisk together the ketchup and brown sugar, and spread evenly over the top of the meatloaf.
- Bake for 55-65 minutes, until the internal temperature reaches 160°F. Let rest for 10 minutes before slicing.
- While the meatloaf rests, melt the butter in a saucepan over medium heat, whisk in the flour, and cook for 1-2 minutes.
- Gradually whisk in the beef broth and simmer for 5-6 minutes until thickened into a smooth gravy; season with salt and pepper.
- Slice the meatloaf and serve topped with the warm gravy.
