Meatloaf with Gravy

  1. Preheat oven to 350°F and line a baking sheet or loaf pan with parchment paper.
  2. In a large bowl, soak the breadcrumbs in the milk for 5 minutes to soften.
  3. Add the ground beef, eggs, diced onion, garlic, Worcestershire sauce, salt, and pepper to the breadcrumb mixture and mix gently by hand just until combined; avoid overmixing.
  4. Shape the mixture into a loaf on the prepared sheet or press into the loaf pan.
  5. Whisk together the ketchup and brown sugar, and spread evenly over the top of the meatloaf.
  6. Bake for 55-65 minutes, until the internal temperature reaches 160°F. Let rest for 10 minutes before slicing.
  7. While the meatloaf rests, melt the butter in a saucepan over medium heat, whisk in the flour, and cook for 1-2 minutes.
  8. Gradually whisk in the beef broth and simmer for 5-6 minutes until thickened into a smooth gravy; season with salt and pepper.
  9. Slice the meatloaf and serve topped with the warm gravy.
